Ingredients

  • 1 tbsp ground flaxseed
  • 2½ tbsp water
  • ½ cup vegan butter (softened)
  • 1¼ cups brown sugar (lightly packed)
  • 2 tsp pure vanilla extract
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp cardamom
  • ¼ tsp allspice
  • ¼ tsp nutmeg
  • ⅛ tsp cloves
  • Pinch of black pepper
  • 1½ cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • ¼ tsp salt

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a small bowl, combine flaxseed and water; let sit for 5 minutes to thicken (flax egg).
  • In a large bowl, cream together vegan butter and brown sugar until fluffy.
  • Mix in the vanilla and flax egg until smooth.
  • Add cinnamon, ginger, cardamom, allspice, nutmeg, cloves, and black pepper; stir well.
  • Sift in flour, cornstarch, baking soda, and salt. Mix until a soft dough forms.
  • Roll dough into small balls and coat with sugar (optional for extra crisp).
  • Place on the baking sheet and flatten slightly.
  • Bake for 10–12 minutes, or until edges are golden.
  • Let cool for 5 minutes before transferring to a wire rack.
